Hello, welcome to my world! I’m first and foremost Samantha, or Sam. I’m a mom of 3 beautiful girls. I’m also a Registered Dietitian and have been since 2011.

Most people ask me how I got interested in nutrition. It’s actually a lifelong passion for me. I first saw a Nutritionist named Mary when I was 18. It changed my entire life (obviously, for the better!). I wanted to try out for the UNC Chapel Hill track team, and I knew I needed some help with conditioning. I was taking a gap year to work, save money, and figure out what I wanted to do with my life.

So I saw a holistic nutritionist that was in the same office as my physician. She helped me to understand that the way I ate critically affected the way I felt on a daily basis. I always struggled with stomach issues, mostly anxiety related, and she showed me how to calm that down using the foods I ate. I was hooked!

I went to UNC Chapel Hill in 2006, and immediately I knew I wanted to major in Nutrition and Business. I was unable to do both majors, so I ended up majoring in Nutrition and getting a Bachelor of Science in Public Health through the Gillings Global School of Public Health. I had to apply to get in (even after already getting into Chapel Hill!) and I was really nervous - but I got good grades in the prerequisites and so I got in no problem.

did what is called “DPD requirements” during my Bachelors which qualified me for something called a “Dietetic Internship”, which I did through the South Carolina Department of Health and Environmental Control (SCDHEC). Unfortunately, the internship no longer exists but I have very fond memories of my time, mostly at Palmetto Health Richland (now Prisma Health).

Then, I took the “RD Exam” and became a Registered Dietitian or Registered Dietitian Nutritionist in May of 2011. I was finally able to put the letters “RD” behind my name, and shortly thereafter “LDN” - which means Licensed Dietitian Nutritionist for North Carolina.

I have worked in hospitals, long-term care, dialysis, private practice, and management! Right now, I work as a Regional Dietitian for a company that provides hospital food service operations, along with many other services.
